Busy, Busy, Busy





It seems that it is a never ending theme around here:) Last weekend was my grandparents 60th wedding anniversary party. My mom and I were in charge of the cupcakes which was really fun:) I baked all of them over the last week, brushed them with a simple syrup to help them stay moist and then froze them. On Saturday morning we frosted them all-all 156 of them:0. I have been using swiss meringue frosting lately instead of regular butter cream-first because of the calories, but I also love how it is less sweet and more creamy. This is the recipe I used and it makes it so clear and easy!!
I thought about taking pics earlier, but totally forgot at the party-which I was really bummed about because I wanted to get one of my grandparents too-instead you will have to suffice with a pic of them from a birthday party a year ago!
